If I post a message or add a board, after I click post (or save in the admin center) eblah freezes on a blank screen.  If I refresh the page, the correct alteration shows up.  Any ideas?

Sounds like a problem with your browser or connection than a problem with the installation. Try clearing your cache. Use CCleaner from http://downloads.i-conica.net/pages/cleanup-tweaking/ccleaner/ccleaner.htm to clear the cache and other temporary files.

Also, check the status bar at the bottom of the browser as its "frozen" see if it says "connecting to 'yourdomain' "

Does this happen every time? or just sometimes?

Try getting someone else on another connection to try to replicate the problem, It's likely that the server is way to busy to process the changes you just made.
But when I've had the same problem in the past a cache, temporary file clearance has sometimes fixed it. Also Firefox 3 is out, try upgrading to that. http://downloads.i-conica.net/pages/browsers-plugins/firefox/firefox.htm

If that doesn't help, Contact your host. It isn't a fault with your installation of E-Blah which is the good news.

As far as I can tell, it happens every time.  Seems like it is writing to the server fine, but can't get some sort of process that refreshes the browser to execute.  Perhaps a permission problem...but I know very little about web servers and the like.  I didn't get this problem before when I was using a different host.  Now it comes up when I started using http://www.freehostia.com

Yeah, That confirms it is a heavily loaded server your on. Nothing to do with permissions. You'd get either a 500 error or an eblah error if you set permissions wrong. I'd contact your webhost.
